Our West African Gari, a flour from dried and ground cassava root, is a staple food in West-African countries. It requires no cooking to be eaten as it is cooked in the preparation process, and only requires a small amount of water. Gari can be used to make fufu or be used as a starchy side dish, like rice or couscous. Some mix Gari with cold water as a snack, sometimes adding sugar, salt, or even evaporated milk.
